Ingredients
- 125g Dried chickpeas, soaked overnight & boiled for 45 mins
- 1-2 Cloves of garlic.
- Crushed 2 tbsp extra virgin olive oil
- 1 tbsp tahini (sesame seed paste).
- Juice of 1/2 lemon.
- 1-2 tbsp pine nuts.
- Salt.
- Freshly ground pepper.
Optional:
- Cummin & red chilly powder.
Instructions
Step 1
Drain & rinse chickpeas. Retain 1-2 tbsp of chickpeas, add the remainder to a blender along with garlic + oil + tahini + lemon juice & 2 tbsp water. Blend until smooth, add salt & ground pepper and blend some more.
Step 2
Check for seasoning and add extra water to achieve desired consistency.
Step 3
Toast pine nuts in a pan for 3-4 mins on a medium flame, till lightly coloured.
Step 4
In a clean shallow plate add the hummus from the blender, garnish with the retained chickpeas & pine nuts, drizzle with few drops of olive oil, can add the cumin and red chilly powder at this point.
Step 5
Chill in the refrigerator for at least 2 hours before serving.
