Ingredients

  • 100g shelled edamame
  • 20g sweetcorn
  • 1/2 cup beetroot diced
  • 1/4th cup onion diced
  • 1/2 cup red cabbage shredded
  • 1 tbsp roasted sesame seeds

Salad Dressing:

  • 1/3rd tbsp olive oil
  • 1/2 tbsp balsamic vinegar Salt
  • Small pinch 1/4th tbsp ground pepper

Instructions

Step 1

In a pressure cooker cook the shelled edamame beans for 5-7 mins. Pressure cook the sweet corn for 5-7 mins. Boil beetroot, let it cool and dice it.

Step 2

In a clean bowl combine the onion, beetroot, cooled & cooked sweetcorn, edamame, sesame seeds & shredded red cabbage.

Step 3

Salad dressing: add balsamic vinegar + olive oil to a bottle & shake the bottle till the mix turns cloudy. To this bottle add ground pepper, salt & herbs of your choice & shake the mix.

Step 4

Add the salad dressing to the salad a few minutes prior to eating the salad.
